A chicken skewer recipe is a good one for the repertoire no matter the time of year. Whether the sun is shining and you can chuck them on the barbie or it's October and you get them sizzling under the grill, they're a quick delicious dinner that we love.
These pineapple and chicken skewers are quickly marinated in coconut cream, rum and pineapple juice which tenderises the meat, giving you the juiciest chicken ever.

Ingredients
- 200 ml coconut milk
- 200 ml pineapple juice
- 50 ml white rum
- 10 g coriander, finely chopped
- 2 chicken breasts, cut into chunks
- 2 red peppers, chopped into large cubes
- 1 red onion, chopped into large cubes
- 250 ml pineapple chunks
To serve
- 2 tsp. desiccated coconut
- coriander, chopped
Directions
- Step 1In a large bowl, add the coconut milk, pineapple juice, white rum, coriander and chicken. Stir to combine, cover and marinade in the fridge for 20 minutes.
- Step 2Preheat grill to medium/ high.
- Step 3Build the skewers by threading chicken, peppers, red onion and pineapple alternating each ingredient until you have used everything up.
- Step 4Place the skewers under the grill for 14 minutes, turning halfway. The chicken should be cooked through, and the pineapple will start to caramelise.
- Step 5Whilst they’re cooking, add the marinade to a saucepan and simmer for 10 minutes or until reduced.
- Step 6Serve the skewers with a drizzle of the reduction and finish with coconut and coriander. Enjoy!
