We are huge fans of a chorizo recipe, and these meaty skewers are a fresh take on what to do with a rump steak as we marinade chunks in wine before sandwiching onto skewers with chorizo and red onion. Finished with our beefy, red wine glaze and ready in under 20 minutes, these are the perfect way to upgrade your next steak night.

Ingredients
- 500 g rump steak, cut into 2 1/2cm chunks
- 200 g chorizo, sliced into 1cm slices
- 300 ml red wine
- 1 beef stock
- 4 sprigs of thyme
- 1 red onion, peeled and quartered
- 2 Tbsp. butter
- 2 Tbsp. honey
- 8 skewers, soaked in water for at least 1 hour
Directions
- Step 1Add the steak, chorizo, red wine, beef stock and thyme to a bowl. Stir and leave to marinade in the fridge for 20 minutes.
- Step 2Meanwhile, preheat grill to its highest setting. Build the skewers by threading the onion pieces, chorizo and steak chunks alternating each time. We went with each skewer having three steak pieces and 2 chorizo slices but make them your own and get creative.
- Step 3When you’re ready to cook your skewers, in a saucepan over medium, add the marinade and place over a medium heat. Add the butter and honey and simmer for 10 minutes or until reduced by half and glossy.
- Step 4Cook your skewers under the grill for 2-3 minutes each side for medium rare, or 4-5 minutes each side for well done. Drizzle with remaining glaze and serve
