Our sticky pork belly with pineapple is a mealtime winner. On the table in 25 minutes, the only prep is marinating the pork which means you can have this dinner waiting in the fridge after a long day.
The sauce uses apple sauce as quick way to inject fruitiness to the glaze without any fuss. We also grate the onion instead of chopping, which stops it from tasting sharp and harsh. Instead, it gives a gentle savoury warmth that makes the sauce super tasty.

Ingredients
- 500 g thin pork belly slices
- 200 g pineapple slices
- 1 1/2 tsp. garlic, crushed
- 2 tsp. ginger puree
- 1 red chilli, halved
- 3 Tbsp. apple sauce
- 1 onion, grated
- 3 Tbsp. rice vinegar
- 4 Tbsp. light soy sauce
- 3 Tbsp. honey
- 1/2 tsp. Chinese 5 spice
To serve
- red chilli, chopped
- spring onion, chopped
Directions
- Step 1To marinate your pork: in a large bowl, add the garlic, ginger, chilli, apple sauce, onion, Chinese 5 spice, rice vinegar, light soy sauce and honey. Stir to combine and add the pork belly, ensure the pork is nicely coated in the marinade, cover and place in the fridge for 1 hour or over night.
- Step 2Preheat grill to 200°C and line a baking tray with foil. Lay your pork out evenly and cook for 20 minutes, flipping half way through.
- Step 3Meanwhile, add the marinade liquid to a sauce pan and place over a medium heat. Simmer for 6-7 minutes or until starting to thicken (ensure the sauce has been cooking for at least 5 minutes before tasting).
- Step 4When the pork has been under the grill for 20 minutes, add the pineapple in and around the pork and pour over your sauce. Give the tray a shake and return to the grill for a further 5 minutes or until the pork is starting to get sticky.
- Step 5Finish with chilli and spring onion and enjoy!
